C is for Carrots

When I think of spring, I think of Easter, bunnies and carrots. Even though carrots are available year round, they still scream spring. While there are many ways to prepare carrots, I really love the simple carrots at Cracker Barrel. I'm not sure exactly how they make their carrots, but they are sweet and tender and got me to thinking about how I could achieve a similar result. I wanted to come up with a way to pump up the natural sweetness of the carrots, so I decided to soak a bag of baby carrots in sweetened water. I put my carrots in a lidded container, added a cup of sugar and covered the carrots with water. I put the lid on the container and let them soak overnight in the fridge. 

The next day, I poured the carrots, sugar water and all into a saucepan and simmered them on the stove until the carrots were tender and the water had thickened to a syrup. Right before serving, I stirred in 1/2 stick of butter and sprinkled in some salt and pepper. 

Try this sweet bunny candy the next time you want to add a pop of bright orange color to your meal. All your honey bunnies will love them.
